What Rice Is Used for Sushi?

Everyone who loves sushi understands the importance rice plays in this Japanese classic dish. It is also important to know what rice is used for sushi.

Japanese sushi chefs use a particular type of rice for their dishes. It is called sushi rice, and it is made of short-grain Japanese rice.

If you are unable to find the rice, you can use other rice types to make sushi, such as Calrose rice or brown rice. Continue reading to find out more.

What Kind of Rice Is Used?

As we have already mentioned, sushi rice can be made from short-grain white Japanese rice and medium-grain Californian rice. The bag will often say “sushi” on it. It will likely be available at your grocery store, but it may not be available at your local Asian market.

No long-grain rice, such as Basmati or Jasmine rice, should ever be used to make sushi.

Long-grain rice can be used in Japanese cuisine but it is not suitable for sushi. It lacks starch, so the rice won’t stick to it.

Best Rice for Sushi

Although you can technically use any type of rice in your homemade sushi, it won’t taste the same unless it’s sushi rice.

It is well-known for its stickiness. This allows it to stick with fish and other ingredients. White rice can be too soft, but you can make it sticky by cooking it in the right way with the right ingredients.

Here’s a list of the top rice varieties for making sushi.

1. Japanese Rice

Japonica rice (also known as Japanese rice) is the best for making sushi. It’s a mixture of glutinous and ordinary rice.

Koshihikari rice is one of the finest varieties of Japanese rice. It is unfortunately one of the most costly strains, but you can find it in nearly every Japanese supermarket.

2. Sushi Rice

Although sushi and Japanese rice can be confusing, they are actually two different varieties of rice.

Sushi rice is made from Japanese rice that has been steamed and then added vinegar to it. This is how the Japanese term sumeshi is translated as ‘vinegar rice’.

To make sushi rice, a rice cooker is the best choice. If you don’t own one, you can always use a regular saucepan.

After the rice has been cooked, season it with vinegar and salt. These three ingredients will ensure that your sushi has the perfect balance of sweet, salty, and sour flavors.

3. Calrose Rice

If you are unable to find Japanese rice, consider using Calrose rice. Calrose rice has a medium grain, which is not the case with traditional Japanese rice.

This rice strain is from California and has been growing since 1950.

4. Brown Rice

Brown rice isn’t often used for sushi but some people like it because it has 15% less calories than white rice.

Aside from that, brown rice has a stronger flavor, so be aware of that when making sushi. Some people do not recommend brown rice due to its longer boiling times.

This is, however, the most nutritious type of rice.

Rice Types to Avoid for Sushi

People use a variety of rice for sushi, but it is not recommended. These include:

  • Arborio rice
  • Glutinous rice
  • White long-grain rice (such as Basmati rice)
