For every 6 oz of crab meat, I found that squeezing out 3 handfuls provided the best consistency. Transfer the squeezed crab meat to a separate dish. Remember, the aim here is to have crab meat that’s as devoid of moisture as possible. Any excess water can compromise the quality of the sushi roll, making the nori sheet damp and less enjoyable.
Creating the Spice Mix: In a mixing bowl, combine the heavy mayonnaise, Sriracha, and Shichimi Togarashi. Stir them together until you get a smooth, spicy, and creamy blend. I prefer using two spoons for this process, but any stirring tool can work just as efficiently.
