California Roll Sushi – How to make it?

- Position the bamboo mat (you can purchase one at a low cost online) flat on the cutting board. Across the bamboo mat, lay a thin layer of plastic wrap. Position a nori sheet (or half sheet) on top of the plastic wrap.

- Use only the proper amount of rice. It’s easy to get the measuring of the rice right after some practice. Cover each nori sheet with 1 cup of rice, leaving a small area at the top of the nori to serve as a seal.

- PRO TIP Moisten the fingers while spreading the sticky rice on the nori.
- Put your ingredients in the center of the nori rice. Don’t pack it too tightly. You can also set the nori rice upside down on your rolling mat if you’re making a roll with the rice on the outside. Place your ingredients on top of the nori.
- Pick up the bottom of the mat very lightly over the sushi. Press and shape ingredients into tubes by forming and pressing them. Roll with firm pressure to achieve a good, tight roll.
- Roll the nori until you have about an inch showing at the top. Use some cold water to seal the edge. Hold the mat tightly around the roll to get it to feel evenly tight. You don’t want to press hard enough that you smash your ingredients, or leak out of the sides. With practice, you’ll develop a sense of the fine line.
- Slice the sushi roll in half using a sharp knife on a cutting board. You will have six pieces of sushi now. For a clean cut, wet the knife whenever you cut.
- Next, place the sushi on a plate or a sushi platter. Serve with wasabi paste, soy sauce, and pickled Ginger. You can also include chopped daikon in your sushi if you prefer.
