Instructions to Make Fried California Sushi Roll

  1. Prepare all your fillings for baking by cutting them into long, thin strips.
  2. Place a plastic wrap on top of your sushi mat.
  3. Add cooked sushi rice.
  4. Roll out the rice with a rolling-pin or press it down. The rice should be in a rectangle large enough to cover the nori and approximately 1/2 inch thick.
  5. Remove the plastic wrap at the top.
  6. Add nori wrapping over top, shiny side up.
  7. Add imitation crab, avocado, cucumber, a bit of spicy mayo, and some eel sauce or oyster sauce.
  8. The roll will come together if you pull both sides of the plastic wrap.
  9. You can use a towel, the sushi mat or your hands. Press the roll into a long cylindrical shape and then pack the rice around the ends to completely enclose the role.
  10. Add the egg, Sriracha, and Soy Sauce to a rectangular baking dish large enough to fit the sushi rolls. Whisk together.
  11. Roll the roll into the panko breadcrumbs.
  12. Heat about 1-2 inches of oil in a pan to 350 F. or 360 F.
  13. Then, place the sushi rolls in the pan and cook them for 2 to 3 minutes on each side until the outsides are golden. Remove the sushi from the oil and transfer it onto a cooling rack or paper towel so that the excess oil can drain off.
  14. Add the spicy sauce, eel and oyster sauce or optional French fried onion.
  15. Use a serrated or sharp knife to slice the roll. Pour rice vinegar or water between each cut so that it does not become sticky and ruin the roll.

To make your own spicy Mayo, combine 2 tablespoons of mayo with 1-2 teaspoons of sriracha (depending on the desired level or heat) and blend until smooth.

*Optional sauce that I sometimes use to top my rolls: Mix 1 teaspoon oyster sauce with 2 tablespoons of soy sauce, and a large pinch or sugar until the sugar dissolves.
