Caterpillar Roll: How to Use Avocado on Top of Sushi?

This recipe for the Caterpillar Roll shows how avocado can be used to top sushi. This roll is easy to make, gorgeous to look at and delicious to eat.

The roll’s distinctive appearance is a favorite in sushi restaurants across the United States. It is also a popular choice for home-made sushi.

The ingredients can be very different, even though the name is the same. The majority of recipes I have seen include unagi inside.

Freshwater eel, while a tasty ingredient, is also in danger of becoming a threatened species around the world (it’s already endemic in Japan and the UK! ).

Caterpillar Roll Recipe: Ingredients

Instead of using Unagi for this recipe/tutorial, I will use tempura shrimp! It’s delicious, more sustainable, and cheaper.

You will need the following to complete this tutorial:

  • Four pieces of Tempura Shrimp
  • Sliced Cucumber
  • 1 Avocado
  • Sushi rice 2 cups
  • Half-cut Nori sheets
  • Eel Sauce
  • Sesame Seeds
  • Two Makisu (one wrapped in cellophane and one not)
  • Tezu
  • Sharp Knife

This Recipe Yields 2 Caterpillar Rolls.

Making A Caterpillar Roll!

  • Start by placing a piece of nori over our makisu wrapped in a paper.
  • Add about 2/3 cup cooked sushi rice on top of the nori. Be sure to roll the sushi rice up each side of the nori, and not squash it down.
  • Cut two tempura shrimps in half diagonally. The shrimp will reach the other side of the ori if you do this.
  • Place the shrimp in the middle of the rice mat after flipping it over.
  • Add some cucumber pieces to the middle as well.
  • Use your remaining fingers to secure the ingredients. Slide your thumbs under the makisu. Roll the rice mat slowly over the ingredients, until the nori-side is on the edge.
  • Continue rolling up the caterpillar by following step 6.

Avocado on Top of the Caterpillar Roll

  • Peel one half of an avocado after slicing it in half.
  • Slice the avocado as thinly as possible from top to bottom.
  • Spread out the avocado slices by using one hand to push them to one side, and the other to help slide the slices across the cutting board.
  • Continue pushing until the avocado reaches the length of the roll. You can use the roll to determine how long you should stretch the avocado.
  • Slide a knife under the avocado slices slowly. Use the knife for picking up the avocado slices, and transferring them to the roll.
  • Put a cellophane sheet on top of your avocado, and then gently press a makisu unwrapped over the top.
  • Cut the roll of caterpillar in half. Use long sawing motions in order to cut through the roll.
  • Each half is then cut into four pieces for a total of eight pieces.
  • Remove the cellophane. (Make sure not to leave any pieces on it!). Four pieces should be curved into a circle.
  • Then, take the four remaining pieces and bend them the opposite direction.
  • Then, add some sesame seed toppings and drizzle the eel-sauce over it.

Once you have done it, it will be much easier to repeat. Don’t forget the ginger & wasabi to decorate your plate!
